This article proposes to analyze how competence training and its relationship with the concept of employability and social relevance occur in mid-level professional training in Brazil, based on the debate on the construction of qualified and employable professionals for use in the market In the case of the Confectionery Pole of Agreste Pernambucano, a qualitative descriptive-analytical research was carried out. The method is a case study, data collection was used to conduct individual interviews and documentary research and data analysis was a thematic analysis. After a presentation and analysis of data, which is currently perceived by SENAI, SENAC, IFPE and the State Department of Education structure their documents, curricula and teaching methods in the notion of competencies and aimed at building a professional profile to the demands placed by contemporary society. Finally, conclude that the formatted processes are of a national character, without the context of the Pole, they retain some specificities imposed by the socioeconomic characteristics on which they are organized.
