“O PÃO NOSSO DE CADA DIA”: representações dos pratos alegóricos do Brasil e de suas culinárias regionais
Abstract
Talking about culture and eating habits from the perspective of consumers in a territorial and culturally vast country like Brazil was a task undertaken by few researchers. As a way to get to know better what the Brazilian eats in his daily routine, what dishes are his preference, what he would recommend to someone who has inserted himself in our culture to try, what dish he would prepare if he was out of the country and which dish best represents Brazil are questions that we seek to answer in this article. Through descriptive statistical analysis, we realized that rice with beans, a salad or some vegetables and a protein is the basic structure of our daily dish. A large number of respondents go to the kitchen every day to prepare their meals and are responsible for what they do, with breakfast and dinner being the most popular at home. The most remembered regional cuisines were those from Minas Gerais, Bahia and Rio Grande do Sul, with tropeiro beans, acarajé and barbecue being the dishes that most represent them respectively. At the end, it was noticed that the image of feijoada still prevails in the imagination of the Brazilian as the dish that best represents our gastronomic identity, even though it is not exactly the type of food that is consumed every day.
